Hi, everyone!
I'm a pastry chef living in Tokyo, Japan. I decided to become a pastry chef during my senior year in university, so upon graduation, I returned to Japan and worked as an apprentice at a small, local patisserie. I also briefly worked at a chocolaterie in the city.
During summer break while I was still attending pastry school, I traveled to France and took an amazing class in chocolate with M.O.F. Chef Olivier Bajard. THAT was one memorable summer!
After graduating from pastry school (Ecole Tsuji Tokyo) in 2008, I was offered the opportunity to work with the pastry/bakery team in Taipei's Ambassador Hotel.
