Had the pleasure of helping you set up at WPF last July and taking your class. I'm a second year student GeorgeBrown college in Toronto . In theory class my group is doing a project on a chef/food movement. Since I love your books( I own 3 that I use to inspire me) and totally enjoyed your class I have made it my mission to introducing you and your cake books/style to a bunch of canadian pastry students who don't even know who you are... How sad! ...What words of wisdom or fun do you have for this generation of bakers and pastry chefs. Do you have any favourite sayings that represents you as a cake decorator?

I heard that you have had surgery.....are you okay?? Take some riestling for therapy...that is the only thing that will work not only for leg aches, but also for heart aches...hahaha. No seriously, hope you are doing okay!!
Good luck on Tuesday. I've had few surgeries on my knees and feet and they are never quite the same...better, but not the same. Be patient and diligent about Physical Therapy! How is the new book coming? Can't wait to see it.
